Chef Ivana Raca has already achieved unparalleled success in what has traditionally been a male dominated field.

The first female to hold the position of saucier in any of McEwan’s kitchens, Ivana received another promotion making her sous chef on the team that opened ONE Restaurant by the age of 24, Ivana was selected as the first female Executive Chef for the six million dollar food emporium McEwan Foods.

Looking for more challenges, in 2012 Ivana traveled to Australia’s Gold Coast where, for two years she worked under Two Star Michelin Chef Paul Froggatt at the Palazzo Versace.

Upon her return to Canada, Ivana entered one of the first Underground Chef Battles in Toronto and to no one’s surprise, made it to the final round. Her competitive spirit was most recently on view on the Food Network’s “Beat Bobby Flay”.

She is now a proud partner at Ufficio.

Afrim Pristine

Maître Fromager (Cheese Master)

Afrim Pristine is Canada’s premier cheese expert and owner of the Cheese Boutique, with over 23 years of experience in the art of cheese making. As one of the world’s youngest “Maître Fromager”, Afrim is the only Canadian to receive this title, awarded to those who demonstrate exceptional cheese knowledge and recognized within their community.

Afrim is actively involved with charities and foundations he’s passionate about and he’s also instrumental in continuing to build relationships and collaborations with some of Canada’s top chefs and restaurants. Afrim is currently working on completing his cookbook focused on all things cheese, available October 2018.

Cheese Boutique:

Cheese Boutique, a 10,000 square foot gourmet food store located in the heart of Etobicoke, has continued to provide a wide range of gourmet ingredients to customers and Toronto’s culinary community. Now, in its 48th year, Cheese Boutique contains the cumulative knowledge of three generations whose expertise and influence has earned accolades locally and abroad.

Chef Cory Vitiello was born and raised in Brantford Ontario and began cooking at age fifteen, starting his own catering business out of his family home. He’s a graduate of Stratford Chef School and did his apprenticeship at Scaramouche Restaurant in Toronto.

Some of Chef Cory’s other career highlights include his gig as sous chef at Cecconi’s, in Melbourne, Australia (2003) and Chef de Cuisine at Toronto’s Drake Hotel (2004-2007). Cory was voted the best new chef in Toronto in 2009 by Enroute Magazine and acted as the national spokesman for Thermador (2010, 2011).

Cory owns and operates the Flock Rotisserie and Greens which offers delicious food that’s “pretty good for you” whether you’re looking for a speedy take-out option or a casual dine-in spot- Flock is a quality, healthy and easy choice- it offers fresh ingredients that provide the fuel to get his diners through their days!

As well as being an accomplished chef, Cory showed off his “on camera” talent on Food Network’s “Chef in Your Ear”.

Sarah Keenlyside is a visual storyteller, artist and creative collaborator on projects ranging from documentary films, large-scale art installations, community events and culinary experiences.

She is also co-owner and creative director of Toronto’s Chocolates X Brandon Olsen (2017 Wallpaper Magazine International Design Award winner) and Restaurant La Banane, both of which she founded with her fiancé, chef Brandon Olsen. 

Sandy De Almeida is a Toronto based bartender and cocktail consultant. She launched Kindling in 2007, a pop up that according to the Globe And Mail “helped school Toronto on how to make a proper drink and introduced sturdy cocktails to a city that was still under the influence of flavored vodka martinis”.

6 time winner of NOW magazine’s reader’s poll ‘best bartender in Toronto’, she has judged several Toronto cocktail competitions, including Speed Rack Toronto and Rematch Toronto. You can find her at The Drake hotel.
